Well I don't know kaprun, but I went to mayrhofen on my first ski holiday ever so at that time I couldn't compare really but I liked it very much. The only real thing you need to check is that the line to get in the lift from the city to the start of the resort is an hour or something... And then the lift cabine up takes about 10-15min till you can put your board on and start.. So or just be the first one in line early in the morning.
In mayrhofen the city itself is really après-ski like... Many bars and it's a really nice town just to walk through.
I don't remember much of the slopes, but it was a pretty big area with also the "harakiri" slope. (harakiri is japanese for suicide). It's the steepest slope in austria: 78%. You have a good diversity of easy slopes and really hard ones.
Also if you go there the restaurant when you get out of the lift from mayrhofen is really good self service haha, loved that restaurant.
Well good luck with choosing, and fck my english if I made mistakes

been to mayrhofen, nice area but gets kinda busy, as it's a very popular resort with lots of easy runs. but dc (or vans?) park is there, used to be a burton park and its good size and well-shaped. hintertux glacier is in the vicinity, make sure you visit that and the whole zillertahl valley too, it's easy to get out to different areas if you get bored with mayrhofen itself. apres is huge there, and the whole place feels quite young and lively.
can't say it's my favorite in austria but worth a visit, especially if you're driving and able to explore the areas around

Hi
I haven't been to Kaprun but I have been to Zillertal a number of times and I really like it.
It is right that a lot of people use the Penkenbahn from Mayrhofen up into the skiing-area, but the times I've been to Mayrhofen, if you get up early and can get to the lift before 9.15 you usually avoid any queue. In my experience the 1 hour long queue first starts at around half past 9.
Also remember you don't have to stay in Mayrhofen, you could stay in Zell am Ziller or Finkenberg as well and use the same area.
